Best Vanilla Cupcakes
This recipe is so simple and utilises vegetable oil which results in a light cake.

Recipe
1.25 cups SR flour
1.25 teaspoons baking powder
1.5 teaspoon baking soda
.5 teaspoon salt
2 eggs
1.5 teaspoons pure vanilla extract
.5 cup vegetable oil
.5 cup buttermilk
Directions
Preheat the over to 350F
stir together the flour, baking powder, baking soda and salt and set aside
In an electric mixer, add eggs and beat for 10 seconds, add the sugar and vanilla and beat for a further 30 seconds. Then add the oil and beat.
Put eh speed to low and slowly add about half of the flour mixture and half the milk. Slowly beat in the rest of the flour and milk until well combined and runny.
Pour the batter into large paper liners to about 3/4 full.
Bake for 12-14 minutes, checking with an inserted skewer. If it comes out dry, cupcakes are ready.
